Ingredients:
Cheesecake Base:
200g Digestive biscuits (finely crumbled)
75g Unsalted butter (melted)
Cheesecake:
200g Fresh strawberries
1 Lime
160g Caster sugar
250g Marscapone cheese
300g Cream cheese (e.g. Philadelphia original cream
cheese)
400ml cream
Cheesecake topping
(Optional)
15 Strawberries (washed and halved for decoration)
Instructions:
Step 1:grind the biscuits.
Step 2 :melt the butter.
Step 3: add the biscuit
crumbs to the melted butter and mix them together.
Step 4: press the mixture
into a greased cake tin.
Step 5 put the base in the
freezer.
Step 6 in a large bowl, mix
together the marscapone, cream cheese and the cream
Step 7 add the strawberry
puree to the cream and cheese and mix.
Step 8 Pour the cheesecake
mix over the biscuit base and put it in the freezer overnight.
Step 9 Decorate the
strawberry cheesecake with strawberries and some whipped cream.
